Cook chorizo

Heat a medium skillet over medium-high heat. Add the haus chorizo (no additional oil needed if it's fatty). Break it up with a spatula and cook until browned and cooked through, about 6–8 minutes, stirring occasionally.

Sauté aromatics

Push the cooked chorizo to one side of the pan (or transfer to a bowl) and add the diced onion to the cleared space with a splash of oil if the pan is dry. Sauté until translucent, about 3–4 minutes. Add the minced garlic and cook another 30 seconds until fragrant.

Combine beans

Stir the drained black beans into the skillet with the chorizo and onions. Add cumin, smoked paprika, sea salt, and black pepper. Reduce heat to medium-low and gently simmer, mashing a few beans with the back of a spoon to thicken the mixture, about 3–4 minutes.

Finish

Stir in lime juice and chopped cilantro, taste and adjust seasoning. Keep warm on low while you prepare tortillas and eggs.

Tortillas + Frying

Heat oil

Pour oil into a heavy skillet (cast iron if available) to a depth of about 1/8–1/4 inch and heat over medium-high until shimmering and a small corner of tortilla sizzles on contact (about 350°F if using a thermometer).

Fry tortillas

Working in batches, fry each corn tortilla 30–45 seconds per side until crisp and golden but still pliable, using tongs to flip. Transfer to a paper-towel-lined rack and immediately sprinkle with coarse salt. Keep warm in a low oven (200°F/95°C) on a baking sheet while you finish the rest.

Prepare eggs

Warm a nonstick skillet over medium-low and add the butter. Crack the eggs into a small bowl one at a time and gently slide into the pan. Cook sunny-side up until whites are set but yolks remain runny, about 3–4 minutes. For over-easy eggs, flip carefully and cook 15–30 seconds more. Season with salt and pepper.

Melt cheese

If desired, place the shredded Vermont cheddar on the hot fried tortillas in the warm oven for 1–2 minutes to melt slightly before assembly, or sprinkle cheese over the eggs in the pan for the final 30 seconds of cooking to gently melt.

Assembly + Garnish

Assemble plates

Place two crispy corn tortillas on each plate. Spoon a generous 1/4 cup of the chorizo-black bean mixture onto each tortilla (divide evenly across 4 tortillas).

Add eggs & cheese

Top each tortilla and bean-chorizo pile with one cooked egg. Sprinkle the shredded Vermont cheddar over the eggs (or on tortillas before eggs) so it melts slightly against the heat.

Sauce & finish

Ladle about 2 tablespoons of ranchero salsa over each egg, dollop with a teaspoon of sour cream or crema, and add sliced avocado if using. Garnish with cilantro leaves and serve with lime wedges on the side for squeezing.

Serve

Serve immediately while tortillas are crisp and eggs are warm. Offer extra salsa, hot sauce, and lime wedges at the table.
