Blackberry-Lemon Compote

Prepare fruit

If using fresh blackberries, rinse gently and drain. If using frozen, measure them straight from the freezer (no need to thaw). Zest one lemon, then juice enough to make 2 tablespoons.

Cook compote

In a small saucepan over medium heat, combine 2 cups blackberries, 1 tablespoon granulated sugar, 1 teaspoon honey, 2 tablespoons lemon juice, 1 teaspoon lemon zest, and 2 tablespoons water. Stir to combine and bring just to a simmer.

Simmer and break down berries

Reduce heat to low and simmer gently, stirring occasionally, for 6–8 minutes until berries begin to break down and juices thicken slightly. Use the back of a spoon or a potato masher to mash some of the berries for a mix of whole fruit and jammy texture.

Thicken (optional)

If you prefer a thicker compote, dissolve 1 teaspoon cornstarch in 1 teaspoon cold water to make a slurry. Stir the slurry into the simmering berries and cook for 1 more minute until the compote thickens. Remove from heat and let cool to room temperature; compote will continue to thicken as it cools.

Adjust sweetness and strain (optional)

Taste and add more honey or sugar if desired, a little at a time. If you want a smoother compote, press the cooked mixture through a fine-mesh sieve to remove seeds, collecting the purée in a bowl. Otherwise, leave seeds in for texture. Cool completely before assembling parfaits.

Layering

Divide 2 cups Arethusa yogurt evenly among 4 serving glasses or bowls (about 1/2 cup yogurt per serving as the first layer).

Add compote

Spoon about 2 tablespoons of the cooled blackberry-lemon compote over the yogurt in each glass (reserve extra compote for topping or for additional sweetness).

Add granola and repeat

Sprinkle about 1/4 cup haus granola over the compote in each glass. Repeat with another 1/4 cup yogurt, another 1–2 tablespoons compote, and finish with a final 2 tablespoons granola on top for crunch.

Finish and serve

Drizzle each parfait with 1/2 teaspoon honey (about 2 tablespoons honey divided among 4 servings) and garnish with a small mint leaf. Serve immediately so the granola stays crunchy. If preparing ahead, keep granola separate and assemble within 30 minutes of serving.
