Make the glaze

In a small bowl whisk together 1/2 cup honey, 1 1/2 tablespoons finely grated fresh ginger, 1 tablespoon fresh lemon juice, 1 teaspoon soy sauce, 2 tablespoons water and 1/4 teaspoon black pepper until smooth. Taste and adjust balance: add up to 1/2 teaspoon more lemon if it feels too sweet, or a pinch more soy for depth.

Warm the glaze

Transfer the glaze to a small saucepan and warm over low heat for 2–3 minutes until glossy and slightly thinned (do not boil). Keep warm while you cook the carrots so it remains pourable.

Prepare carrots

Peel the carrots and trim the ends. Cut into uniform batons about 3–4 inches long and 1/2 inch thick so they cook evenly. If using baby carrots, leave whole.

Sear the carrots

Heat a large skillet over medium-high heat. Add 2 tablespoons butter or oil and let it shimmer. Add the carrots in a single layer (work in batches if necessary) and let them cook, undisturbed, 3–4 minutes until the undersides are golden-brown.

Finish cooking

Reduce heat to medium, stir the carrots, add 3/4 teaspoon fine sea salt, then add 2–3 tablespoons water to the pan and cover with a lid. Steam for 4–5 minutes until carrots are tender but still have slight bite (test with a fork). Uncover and cook another 1–2 minutes to evaporate remaining water.

Glaze and caramelize

Reduce heat to low and pour the warm ginger-honey glaze over the carrots, tossing to coat. Cook, stirring gently, 1–2 minutes until glaze thickens and coats the carrots, becoming glossy and slightly caramelized. If glaze becomes too thick, splash 1 teaspoon water to loosen.

Finish and serve

Transfer glazed carrots to a serving dish. Sprinkle with chopped parsley and toasted sesame seeds if using. Serve immediately while warm.
