Sandwich

Method

Garlic Aioli (make first)

Combine mayonnaise, minced garlic, lemon juice and Dijon mustard in a small bowl. Whisk until smooth.

Slowly whisk in the olive oil to emulsify. Season with salt and black pepper. Taste and adjust lemon, salt or garlic as desired. Refrigerate until ready to use.

Bacon and Bread

Cook bacon

Preheat a large skillet over medium heat. Lay the bacon strips in a single layer and cook, turning occasionally, until evenly browned and crispy, about 8–12 minutes depending on thickness. Transfer to a paper towel–lined plate to drain.

Toast focaccia

While bacon rests, butter one side of each focaccia slice. Heat a clean skillet over medium-high or use a grill pan. Place focaccia butter-side down and toast until golden and crisp, 2–3 minutes. Flip briefly (30 seconds) to warm through. Alternatively, toast under a broiler for 1–2 minutes per side.

Assemble Sandwich

Spread about 1 1/2 tablespoons of the garlic aioli evenly on the cut face of each toasted focaccia slice.

Layer the bottom slice with lettuce leaves, then stack the tomato slices in an even layer. Sprinkle the tomato with a pinch of flaky sea salt and freshly ground black pepper (about 1/4 tsp each) to bring out flavor.

Arrange the crispy bacon strips over the tomatoes. If desired, add the remaining lettuce on top to keep tomatoes from making the bread soggy.

Cap with the top focaccia slice, aioli-side down. Press gently to compress, then cut the sandwich in half on the diagonal.

Optional Side Preparations

Haus fries

If serving fries, bake or fry according to package or house-cook method until golden and crisp (typically 12–18 minutes at 425°F/220°C for oven-baked). Season with salt and serve alongside the sandwich.

Green salad

If serving a green salad, toss mixed greens lightly with 2 tablespoons vinaigrette just before plating. Season with a pinch of salt and pepper.

Finish and Serve

Plate the sandwich with the chosen side. Offer extra garlic aioli on the side. Serve immediately while bacon is still warm to enjoy contrast between crispy bacon and cool tomato and aioli.
