Prep wings
Pat the chicken wings dry with paper towels. This removes surface moisture so the wings brown instead of steam.
Season the wings evenly with kosher salt and freshly ground black pepper. Let rest at room temperature for 10–15 minutes while you make the sauce; this helps flavors penetrate and lets the wings come slightly closer to room temperature for even cooking.
Arrange the wings in a single layer (work in batches if needed). Pan-sear undisturbed 4–5 minutes on the first side until well browned, then flip and sear the other side 3–5 minutes. Reduce heat to medium, cover loosely, and cook an additional 6–8 minutes, turning once, until wings reach an internal temperature of 175°F (79°C) and juices run clear. If you prefer crispier skin, transfer wings to a 425°F (220°C) oven for 6–8 minutes after searing.
Bulgogi Signature Sauce
Make the sauce
While the wings cook, combine soy sauce, brown sugar, gochujang, sesame oil, mirin, minced garlic, grated ginger, rice vinegar, honey, and fresh lime juice (if using) in a small saucepan or heatproof bowl. Stir to dissolve the sugar and mix into a uniform sauce.
Warm the sauce over low heat in a small saucepan for 2–3 minutes, stirring constantly, until it thickens slightly and the garlic and ginger bloom. Do not boil aggressively—just a gentle simmer to meld flavors. Remove from heat and stir in sliced scallion whites and 1 teaspoon toasted sesame seeds.
Toss & Finish
Place the cooked wings in a large mixing bowl. Pour the warm Bulgogi signature sauce over the wings, then toss gently but thoroughly so each wing is evenly coated. Work quickly while the sauce is warm so it clings to the skin.
Transfer sauced wings to a serving platter. Sprinkle with thinly sliced scallion greens, extra toasted sesame seeds, and cilantro leaves if using. Serve with lime wedges on the side for optional brightening squeeze.
Serve immediately while hot and saucy. These wings pair well with steamed rice, pickled vegetables, or a crisp slaw.
