Waffle Batter
Preheat and prepare
Preheat your waffle iron according to manufacturer instructions. Lightly grease with a little melted butter or nonstick spray just before cooking.
Mix dry ingredients
In a large bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined.
Whisk wet ingredients
In a separate bowl or large measuring cup, whisk the eggs lightly. Add the milk, melted cooled butter, and vanilla extract and whisk until blended.
Combine
Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a spatula until just combined; a few small lumps are fine. Do not overmix or the waffles will be tough.
Rest batter (optional)
Let the batter rest for 5–10 minutes at room temperature to allow the baking powder to activate and the flour to hydrate — this yields lighter waffles.
Cook waffles
Spoon or pour the recommended amount of batter onto the preheated waffle iron (usually about 3/4 to 1 cup depending on your iron). Close and cook until deep golden brown and crisp, about 3–5 minutes per waffle depending on your waffle iron. Transfer cooked waffles to a wire rack in a warm oven (200°F/95°C) to keep crisp while you cook remaining batter.
Berry Topping & Sauce
Combine berries
Place the strawberries, blueberries, and raspberries in a small saucepan. Add the granulated sugar, lemon juice, and water; stir to combine.
Simmer
Bring the mixture to a gentle simmer over medium heat. Cook, stirring occasionally, 4–6 minutes until berries begin to break down and the sauce becomes slightly syrupy.
Thicken (optional)
If you prefer a thicker sauce, mix the cornstarch with an equal small amount of cold water to make a slurry (about 1 tsp cornstarch + 1 tsp water). Stir the slurry into the simmering berries and cook 30–60 seconds more until thickened.
To Serve
Assemble
Place one or two waffles on each plate. Top with a generous scoop of warm berry sauce and a pat of unsalted butter if desired.
Garnish and serve
Drizzle with maple syrup, dust with powdered sugar if using, and garnish with mint leaves. Serve immediately while waffles are hot and crisp.
