Prepare and slice ham
If the ham is whole, place it on a cutting board and trim any excess fat if desired, leaving a thin fat cap for flavor. Slice the ham into 1/4- to 1/2-inch thick slices against the grain. You should get about 8–10 slices from a 1 lb piece depending on thickness.
Pan-heat and glaze
Heat a large heavy skillet over medium heat. Add 1 tablespoon butter to the skillet and swirl to coat. Lay ham slices in a single layer (work in batches if needed). Fry 1–2 minutes per side until edges begin to brown and the fat renders. Remove ham to a plate and keep warm.
Make the quick glaze
Lower heat to medium-low. Add remaining 1 tablespoon butter, brown sugar, and apple cider vinegar to the skillet. Stir for 30–45 seconds until sugar dissolves and mixture becomes syrupy. Return ham slices to the pan and spoon glaze over each slice 1–2 minutes to warm through and caramelize lightly. Season with black pepper to taste. Transfer to a serving platter and tent with foil while you finish the potatoes.

Prepare potatoes
Cut potatoes into 1/3- to 1/2-inch dice for even cooking. Rinse the diced potatoes under cold water until the water runs clear to remove excess starch, then drain and pat dry thoroughly with a clean kitchen towel or paper towels.
Pan-fry potatoes and onions
In a medium skillet, heat vegetable oil or bacon fat over medium-high heat until shimmering. Add the diced potatoes in an even layer and let cook undisturbed for 3–4 minutes to form a golden crust. Stir or flip pieces and add the sliced onion. Continue to cook, stirring occasionally, for another 8–10 minutes until potatoes are tender and browned on most sides.
Finish and season
Reduce heat to medium. Add minced garlic, smoked paprika, salt, and pepper. Stir and cook 1–2 minutes more until garlic is fragrant. Taste and adjust seasoning. Stir in chopped parsley and remove from heat.
