    Preheat and prep

    Preheat waffle iron according to manufacturer instructions to medium-high heat (for thin, crisp waffles use a hotter setting). Lightly brush or spray the waffle iron plates with a little neutral oil or melted butter if the iron is not nonstick.

    Combine dry ingredients

    In a large mixing bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly distributed and free of lumps.

    Combine wet ingredients

    In a separate bowl or large measuring cup whisk the large egg and whole milk until blended. Whisk in the melted butter and vanilla extract until smooth.

    Make the batter

    Pour the wet ingredients into the dry ingredients and gently stir with a spatula or whisk until just combined. Do not overmix — a few small lumps are fine. The batter should be pourable but not watery; if too thick, add up to 1–2 tablespoons milk, if too thin, sprinkle in up to 1 additional tablespoon flour.

    Rest the batter (optional)

    Let the batter rest 5–10 minutes at room temperature. Resting hydrates the flour and helps produce a tender interior and crisp exterior.

Cooking and Serving

    Cook the waffles

    When the waffle iron is fully heated, pour or ladle an appropriate amount of batter (about 1/3 to 1/2 cup depending on your waffle iron size) onto the center of the lower plate. Close the lid and cook until the waffle is golden brown and crisp — typically 3–5 minutes for a thin waffle. Timing varies by iron; use the indicator light or check visually near the end of cooking. Repeat with remaining batter, re-greasing the plates lightly if needed between batches.

    Keep warm (optional)

    If making multiple waffles, keep finished waffles warm and crisp by placing them in a single layer on a wire rack set over a baking sheet in a 200°F (95°C) oven. Avoid stacking waffles directly on top of each other to preserve crispness.

    Plate and finish

    Place two thin, golden-brown waffles on each plate. Add about 1 tablespoon (or to taste) unsalted butter on top of the waffles so it begins to melt. Serve with 2–4 tablespoons (about 1/8–1/4 cup) maple syrup per plate, or 1/4 cup if sharing between two waffles. If using, dust with powdered sugar and garnish with fresh berries or sliced fruit.

    Serve immediately

    Serve waffles while hot and crisp with additional syrup and butter on the side so guests can add more to taste.
