    Crisp the corn tortillas

    Pour vegetable oil into a skillet to reach about 1/8 inch depth and heat over medium-high until shimmering (about 325–350°F if using a thermometer). Fry each corn tortilla for 45–60 seconds per side until golden and crisp but still flexible. Transfer to a paper towel-lined plate and lightly season with a pinch of salt. Keep warm in a low oven (200°F/95°C) if desired.

    Warm the refried beans: place 1/2 cup refried beans in a small saucepan over low heat. Stir occasionally and add 1–2 tablespoons water if too thick. Heat until just hot, about 3–5 minutes. Alternatively microwave covered for 1–1.5 minutes, stirring halfway.

    Warm the flour tortilla: briefly heat the flour tortilla in a dry skillet over medium for 20–30 seconds per side until pliable, or wrap in foil and warm in the oven for 5 minutes.

Eggs & Cheese

    Cook the eggs

    Heat a nonstick skillet over medium. Add butter or oil and let it melt/spread. Crack two eggs into the skillet. For sunny-side-up: reduce heat to medium-low, cover the pan, and cook until whites are set but yolks remain runny, about 3–4 minutes. For over-easy: cook whites until set, gently flip and cook 20–30 seconds more. Season with 1/8 tsp salt and a pinch of black pepper while cooking.

    If you prefer, scramble: beat eggs with 1/8 tsp salt and pepper, pour into the warmed skillet, stir gently until soft curds form and eggs are set but moist. Remove from heat.

    Add cheese: when eggs are nearly finished (about 30 seconds before you want to serve), sprinkle 1/2 cup shredded cheddar-jack over the eggs and cover briefly to melt, about 30–60 seconds.

Assembly & Garnish

    Spread 1/4 cup warm refried beans evenly over each crisp corn tortilla, leaving a 1/2-inch edge.

    Place one cooked egg on top of the beans on each tortilla. If eggs are large and you used melted cheese on them, ensure cheese side is facing up.

    Spoon 2–3 tablespoons of your chosen sauce (red ranchero or green salsa) over each egg. Use more or less to taste; the recipe calls for a total of 1/2 cup for both servings.

    Finish with sliced or diced 1/2 fresh avocado, sprinkle 1 tablespoon chopped cilantro if using, and add a squeeze of lime to each plate if desired.

    Serve immediately with the warmed flour tortilla on the side for wrapping or scooping; the flour tortilla can be used to make a breakfast taco with leftover beans, egg, and avocado.
