Egg mixture

    Beat eggs

    Crack the 2 large eggs into a medium bowl. Add 2 tablespoons half-and-half (or whole milk), 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk until combined and slightly frothy.

    Incorporate cream cheese

    Cut the softened 1 oz cream cheese into small pieces and whisk them into the egg mixture until roughly incorporated. A few small streaks of cream cheese are fine — they'll melt while cooking and create a creamy texture.

    Wilt spinach: Heat 1 tablespoon unsalted butter in a nonstick skillet over medium heat until shimmering. Add 1 cup packed fresh baby spinach and sauté for 1–2 minutes, stirring, until wilted and bright green. Spread wilted spinach into an even layer in the pan.

Bacon & cooking eggs

    Add bacon: Scatter 1 ounce cooked ground bacon (or crumbled crispy bacon) evenly over the wilted spinach in the skillet.

    Cook the eggs: Reduce heat to medium-low. Pour the egg and cream cheese mixture over the spinach and bacon. Let the eggs sit undisturbed for about 20–30 seconds, then gently stir with a silicone spatula, pulling cooked edges toward the center. Continue to gently fold and push the eggs for 1½–2 minutes until softly set but still moist — do not overcook. The cream cheese will create small creamy pockets.

Finish & serve

    Add cheese: Sprinkle 1 ounce shredded cheddar-jack evenly over the top of the scrambled eggs. Cover the skillet with a lid or a large plate for 30–60 seconds to melt the cheese.

    Plate and garnish: Slide the eggs onto a serving plate. Finish with a pinch of chopped chives or green onion and a few dashes of hot sauce if desired. Serve immediately.
