Blueberry Buttermilk Pancakes

    Mix dry ingredients

    In a medium bowl whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt until evenly combined.

    Mix wet ingredients

    In a separate bowl or large measuring cup whisk the buttermilk, large egg, melted unsalted butter, and vanilla extract until smooth.

    Combine batter

    Pour the wet ingredients into the dry ingredients and stir gently with a spatula or wooden spoon until just combined. Small lumps are fine — do not overmix or the pancakes will be tough.

    Fold in blueberries

    Gently fold in the fresh blueberries, distributing them without breaking them up too much.

    Preheat pan

    Heat a large nonstick or cast-iron skillet over medium heat. Once hot, brush with a thin layer of neutral oil or melted butter (about 1 tablespoon total).

    Cook pancakes

    For two-inch-thick or standard 4-5 inch pancakes, scoop about 1/3 cup of batter per pancake onto the skillet, leaving space between cakes. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook the second side until golden and cooked through, about 1–2 minutes more. Repeat with remaining batter, adding oil/butter as needed.

    Keep warm

    If making ahead, keep finished pancakes on a baking sheet in a 200°F (95°C) oven while you finish the rest so they stay warm and slightly crisp at the edges.

Toppings & Assembly

    Choose your topping: housemade granola or chopped walnuts. If you prefer chopped walnuts, lightly toast them in a dry skillet over medium heat for 2–3 minutes until fragrant, shaking the pan frequently to avoid burning; remove from heat and cool briefly.

    Plate two pancakes stacked. Sprinkle the chosen topping (about 1/2 cup granola or 1/4 cup chopped walnuts) evenly over the top of the stack.

    Dust the stack lightly with powdered sugar (approximately 1 teaspoon) using a small fine-mesh sieve or sifter for an even dusting.

    Add optional garnishes: drizzle 1–2 tablespoons maple syrup around or over the pancakes and scatter additional fresh blueberries if desired.
