Brisket & Eggs

    Prep brisket

    If the smoked brisket is cold, warm it briefly: place chopped brisket in a small skillet over low heat for 2–3 minutes, stirring once, just until warmed through. Remove from skillet and set aside. Warming prevents cooling the eggs when added.

    Beat eggs

    In a small bowl, crack the two eggs and add the milk, salt, and pepper. Whisk vigorously until fully blended and slightly frothy, about 20–30 seconds. The milk loosens the eggs for creamier curds.

    Cook eggs with brisket

    Heat a nonstick skillet over medium-low heat and add the butter. When the butter foams and just begins to brown lightly, add the white parts of the sliced green onions and sauté 20–30 seconds until softened. Pour in the beaten eggs. Allow eggs to set at the edges for 10–15 seconds, then using a silicone spatula gently push eggs from the edges to the center in folding motions to form large soft curds. After eggs are about 60% set (still slightly runny), add the warmed chopped brisket and continue gently folding for another 30–60 seconds until eggs are softly set but still moist. Remove from heat — residual heat will finish cooking.

    Stir in cheese & green parts: Immediately after removing the pan from heat, sprinkle the shredded cheddar jack and the green parts of the sliced scallions over the eggs and brisket. Gently fold once or twice to distribute cheese and wilt the scallions slightly, letting the cheese melt into the eggs.

    Serve: Transfer the scramble to a warmed plate. Taste and adjust seasoning with extra salt and pepper if needed. Drizzle hot sauce or steak sauce if desired and finish with a sprinkle of chopped parsley for color. Serve immediately with toast or tortillas if desired.
