Build and mix
Fill a cocktail shaker halfway with ice. Add 2 oz Cruzan pineapple rum, 0.75 oz fresh lime juice, 3 dashes Angostura bitters, and 0.25 oz simple syrup (optional, if you prefer a slightly sweeter drink). Secure the shaker lid and shake vigorously for 8–10 seconds until the exterior is frosty and well chilled.

Prepare glass
Fill a highball or Collins glass with fresh cubed ice (about 1 cup).

Combine and top
Strain the shaken rum mixture into the prepared glass over the ice. Top with ~4 oz cold ginger beer, pouring gently to preserve carbonation. Give the drink one gentle stir (1–2 turns) to integrate the ginger beer without flattening it.

Finish and garnish
Add 3 additional dashes of Angostura bitters on top (optional) to create aromatic complexity and a slight bitters 'paint' on the foam. Garnish with a lime wheel on the rim and a candied ginger or pineapple wedge on a pick, if using. Serve immediately.

Notes: Taste and adjust — if the drink is too tart, add an extra 0.25 oz simple syrup; if too sweet, increase lime by 0.25 oz. For a stronger ginger presence, use spicy ginger beer or add a thin slice of fresh ginger as garnish.
