    Prep and Marinate

    If using frozen alligator, thaw completely and pat dry. Cut the alligator meat into 1 to 1.5-inch bite-sized pieces. In a medium bowl combine buttermilk and 2 tablespoons hot sauce; add the gator pieces and toss to coat. Cover and refrigerate for at least 1 hour (up to 4 hours) to tenderize and flavor.

    Make the Dredge

    In a shallow wide bowl or rimmed plate whisk together flour, cornmeal, paprika, garlic powder, onion powder, cayenne, 1 1/2 tsp salt, and 1 tsp black pepper until evenly combined.

    Prepare Egg Wash

    In a second shallow bowl whisk the eggs with 1/4 cup milk until smooth.

    Heat Oil

    Pour vegetable oil into a heavy skillet or Dutch oven to a depth of about 1 inch (about 1 cup). Heat over medium-high until oil reaches 350°F (175°C) or until a small pinch of the flour mixture sizzles and browns slightly in 4–5 seconds.

    Coat and Fry

    Working in batches to avoid crowding (about 8–10 pieces per batch depending on pan size), remove gator pieces from buttermilk, letting excess drip off. Dredge each piece in the flour-cornmeal mixture, then dip into the egg wash, and return to the dredge for a final coating. Shake off excess and carefully add pieces to hot oil in a single layer. Fry until golden brown and cooked through, about 3–4 minutes per side (total 5–7 minutes depending on piece size). Internal temperature should reach 145°F (63°C). Use a slotted spoon to transfer to a paper towel-lined tray.

    Finish

    Immediately toss the hot bites with the optional 1 tablespoon unsalted butter if using; this adds gloss and flavor. Sprinkle chopped parsley and an additional pinch of salt to taste. Serve hot with lemon wedges and remoulade dipping sauce.

    In a small bowl combine 1/2 cup mayonnaise, 1 tablespoon mustard, 1 tablespoon sweet pickle relish, 1/2 teaspoon hot sauce, 1/4 teaspoon paprika, 1/2 teaspoon minced garlic, 1/2 teaspoon lemon juice, 1/4 teaspoon Worcestershire sauce, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until smooth. Taste and adjust seasoning or hot sauce as desired. Chill at least 15 minutes to let flavors meld before serving.
