    Prepare glass

    Chill a coupe or highball glass by filling with ice and cold water while you prepare the cocktail (about 3–5 minutes). If using a coupe, remove ice before pouring. If using a highball, leave it chilled and add fresh ice later.

    Dry shake (if using egg white)

    If you want a silky foam, add vodka, elderflower liqueur, lemon juice, simple syrup, grapefruit juice, and egg white to a cocktail shaker. Do not add ice. Seal and shake vigorously for 15–20 seconds to emulsify and build foam.

    Wet shake

    Open the shaker, add a generous handful of ice (about 1 cup). Seal and shake hard for 12–15 seconds to chill and dilute slightly. If you skipped egg white, put all liquid ingredients with ice and shake for 10–12 seconds.

    Strain

    Double-strain the cocktail into the chilled coupe or into a highball glass over fresh ice (use a fine mesh strainer if you used egg white to keep the foam smooth). For a highball, fill the glass about three-quarters full.

    Top and finish

    Gently top the cocktail with 2 oz club soda to add effervescence. If you used a coupe, pour the soda slowly over the back of a spoon to preserve foam. Give a gentle stir once (1–2 turns) to integrate.

    Garnish and serve

    Express a grapefruit twist over the drink to release oils, rim the glass with the peel, and drop it in (or float a thin wheel). Optionally add an edible flower or micro herbs on the foam. Serve immediately.
