    In a shallow wide bowl or pie plate, whisk together 1.25 cups all-purpose flour, 0.5 cup cornstarch, 0.5 cup fine dry breadcrumbs (if using), 1 tsp baking powder, 2 tsp kosher salt, 0.5 tsp black pepper, 0.5 tsp garlic powder, and 1 tsp paprika until evenly combined.

    Reserve about 1/2 cup of the dry mix in a separate shallow dish to use for a final dredge if you want an extra-crispy coating.

Calamari & Marinade

    Prepare calamari

    Pat 1 lb calamari rings dry with paper towels to remove excess moisture. Trim any ragged edges if needed so rings are uniform thickness (about 1/4-inch).

    Marinate in buttermilk

    Place the dried calamari in a bowl and pour 1 cup buttermilk over them. Add 1 tbsp fresh lime juice, 1 tsp hot sauce (optional), and 1/2 tsp salt. Stir to coat, cover, and refrigerate for 15–30 minutes. The buttermilk helps tenderize and allows the dry mix to adhere.

    Heat the oil

    Pour about 4 cups neutral oil into a large heavy pot or deep fryer to a depth of 2–3 inches. Heat oil over medium-high heat until it reaches 350°F (175°C). If you do not have a thermometer, test by dropping a pinch of the reserved dry mix into the oil; it should sizzle and rise to the surface steadily.

    Dredge calamari

    Working in small batches (to avoid overcrowding), remove calamari from buttermilk, letting excess drip back into the bowl. Dredge pieces thoroughly in the main dry mix so each ring is evenly coated. For an extra-crispy result, press coated rings into the reserved 1/2 cup dry mix briefly before frying.

    Fry in batches

    Carefully lower a single layer of dredged calamari rings into the hot oil using a slotted spoon or spider. Fry for 1.5–2 minutes, turning once if necessary, until golden brown and crisp. Do not overcook — total fry time should be short to keep calamari tender. Remove with a slotted spoon and transfer to a wire rack set over a baking sheet or paper towels to drain. Lightly season with a pinch of salt while hot. Repeat with remaining calamari, letting oil return to 350°F between batches.

    If making large quantities, keep finished calamari warm in a low oven (200°F / 95°C) on a wire rack while you finish frying remaining batches so they stay crisp.

    Prepare dipping sauces

    Place 1/2 cup creamy garlic aioli and 1/4 cup sweet chili sauce (if using) into small bowls for serving. Optionally mix a little lime zest or a squeeze of lime into the aioli for a bright note.
