Method
Oyster & Garnish
- 1
Shuck & Inspect
Shuck the oyster just before serving so it stays cold and fresh. Retain the liquor (natural oyster brine) in the shell. Check for any shell fragments and remove them. Place the oyster, cupped side down, in a small shot glass or on a chilled spoon so it sits level.
- 2
Add garnish: place the pickled pearl onion skewered or perched on the rim (or on top of the oyster if small), and squeeze the 1/4 lemon wedge lightly over the oyster. Finish with a light grind of cracked black pepper over the oyster.
Shooter Mix
- 3
Combine Shooter Ingredients
In a small cocktail shaker or mixing glass, add the vodka, tomato cocktail sauce, fresh lime juice, the two drops of Worcestershire sauce, two dashes of hot sauce, and ice. Cap and shake vigorously for 8–10 seconds to chill and slightly dilute the mix so it integrates but remains bright. If you don't have a shaker, stir briskly with a spoon for 15–20 seconds over ice.
- 4
Strain & Finish
Strain a small portion (about 1 ounce) of the chilled shooter mix over the oyster in its shell or spoon so the oyster is partially submerged but still visible. If you prefer a stronger alcohol presence, pour the full 1.5 oz around the oyster instead of over it. Garnish with the cocktail onion on the rim if not already placed.
- 5
Serve immediately: deliver the shooter straight away while cold. Instruct the guest to lift the oyster and shooter together (or tilt the shot glass) and swallow the oyster with the flavored mix in one motion for the classic shooter experience.
