Method

Cocktail

  1. 1

    Prepare glass

Rub a lime wedge around the rim of a chilled rocks or coupe glass. Spread kosher salt on a small plate and gently dip the rim into the salt to create an even salted rim. Set the glass aside.

  2. 2

    Combine ingredients

In a cocktail shaker, add 2 oz Don Julio Blanco tequila, 0.5 oz Combier (orange liqueur), 1 oz fresh lime juice (about one lime), and 0.5 oz agave nectar. Fill the shaker two-thirds full with ice (about 4–6 oz).

  3. 3

    Shake

Secure the shaker lid and shake vigorously for 10–15 seconds, until the shaker is well-chilled and slightly frosted on the outside. This both chills and slightly dilutes the mix to balance brightness and sweetness.

  4. 4

    Strain and serve

Double strain the cocktail into the prepared glass over fresh ice (if using a rocks glass) or served neat in the chilled glass. If serving on the rocks, add 1–2 large ice cubes (about 2 oz each) to the glass before pouring.

  5. 5

    Garnish

Garnish with a lime wheel or wedge on the rim. Optionally express a lime peel over the top to add an aromatic burst.

  6. 6

Taste and adjust: If the cocktail tastes too tart, add a quick bar spoon (about 5 ml) of additional agave nectar and stir gently in the glass. If too sweet, add a splash (about 2–3 ml) more lime juice.
