Prep

Preheat oven to 425°F (220°C). Trim the stem ends of the brussels sprouts and remove any loose or yellow outer leaves. Cut larger sprouts in half lengthwise so all pieces are similar size; leave small ones whole.

Season

Place the prepared brussels sprouts in a large bowl. Add 2 tablespoons extra-virgin olive oil, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Toss thoroughly to coat each sprout evenly.

Roast

Arrange the sprouts cut-side down in a single layer on a rimmed baking sheet (use two sheets if crowded). Roast in the preheated oven for 18–22 minutes, until outer leaves are deep golden-brown and centers are tender when pierced with a fork. Shake or flip once about halfway through to promote even browning.

Optional Add-ins & Finish

Garlic (optional)

If using garlic, add the minced garlic to the baking sheet during the last 4–5 minutes of roasting so it softens and browns slightly without burning.

Finish with Acid & Sweetener (optional)

Remove the roasted sprouts from the oven. While still hot, drizzle with 1 tablespoon balsamic vinegar and 1 teaspoon maple syrup or honey. Toss to coat and let the acidity caramelize slightly on the hot sprouts.

Garnish

Transfer to a serving bowl and sprinkle with 2 tablespoons finely grated parmesan and 2 tablespoons toasted pine nuts or chopped walnuts, if using. Taste and adjust seasoning with additional salt and pepper as needed.
