Prepare the Yams
Preheat your oven to 425°F (220°C). Peel the yams and cut them into thin fry-like shapes, about 1/4 inch thick for even cooking.

Coat with Seasoning
In a large bowl, toss the yam fries with olive oil, salt, black pepper, paprika, and garlic powder until evenly coated.

Bake the Fries
Spread the yam fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy, turning halfway through for even cooking.
Roasted Garlic Aioli

Roast the Garlic
Wrap the garlic cloves in aluminum foil and roast in the oven alongside the yam fries for about 20 minutes or until soft and fragrant. Allow to cool slightly before handling.

Prepare the Aioli
In a medium bowl, combine the roasted garlic (squeezed from the skins), mayonnaise, lemon juice, salt, and black pepper. Whisk until smooth and creamy.

Finish the Aioli
Slowly drizzle in the olive oil while whisking continuously until well blended. Adjust seasoning to taste.
