Yam and Black Bean Patty

    Prepare the Yams

    Peel and chop the yams into cubes. Steam or boil them until tender, about 15-20 minutes. Drain and allow to cool slightly.

    Mash the Ingredients

    In a large mixing bowl, mash the cooked yams with a fork or potato masher until smooth. Add in the black beans, rolled oats, chopped onion, minced garlic, ground cumin, paprika, salt, black pepper, olive oil, and cilantro. Mix thoroughly until well combined.

    Form the Patties

    Shape the mixture into 4 equal patties. If the mixture is too wet, add more oats as needed.

    Cook the Patties

    Heat a skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.

Roasted Garlic Aioli

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb and drizzle with a little olive oil. Wrap it in foil and roast for about 30-35 minutes, or until soft and caramelized. Allow to cool.

    Prepare the Aioli

    Once cooled, squeeze the roasted garlic cloves into a bowl, discarding the skins. Add the mayonnaise, lemon juice, and salt. Mix until smooth and creamy.

Burger Assembly

    Assemble the Burger

    Slice the burger buns in half and toast them lightly if desired. Place a lettuce leaf on the bottom bun, followed by a yam and black bean patty, slices of tomato and avocado. Top with a generous dollop of roasted garlic aioli. Place the top bun on and serve immediately.
