Preparing the Filling

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped bell peppers, zucchini, and red onion. Sauté for about 5-7 minutes until the vegetables are tender.

Add Corn and Spices
Stir in the corn, cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes until the corn is heated through.

Mix in Beans and Rice
Add the black beans and cooked rice to the skillet. Stir well to combine all the ingredients. Cook for another 2-3 minutes until everything is heated through. Remove from heat.
Assembling the Burritos

Prepare the Tortillas
Warm the large flour tortillas in a dry skillet or microwave for a few seconds until pliable.

Fill the Tortillas
On each tortilla, place a generous scoop of the veggie filling in the center. Top with chopped cilantro, a squeeze of lime juice, and optional sour cream or shredded cheese.

Wrap the Burritos
Fold the sides of the tortilla inward and then roll it up from the bottom to the top, securing the filling inside. Repeat with remaining tortillas and filling.

Cut the burritos in half if desired and serve with extra lime wedges or dipping sauce.
