    Chop the Vegetables

    Wash and chop the zucchini, bell peppers, and carrots into bite-sized pieces. Halve the cherry tomatoes and slice the red onion into thin strips. Mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add Harder Vegetables

    Add the chopped zucchini, bell peppers, and carrots to the skillet. Season with salt, black pepper, and Italian seasoning. Sauté for about 5-7 minutes until they begin to soften.

    Add Spinach and Tomatoes

    Add the cherry tomatoes and spinach to the skillet. Continue to sauté for an additional 3-4 minutes until the spinach is wilted and the tomatoes are slightly blistered.

Serving

    Plate and Serve

    Remove the skillet from heat and transfer the sautéed veggies to a serving dish. Serve warm as a side dish or over rice or pasta.
