Burrito Assembly

Method

Marinated Steak

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

  2. 2

    Marinate the Steak

Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours.

  3. 3

    Cook the Steak

Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 5-7 minutes on each side, or until desired doneness. Let it rest for 5 minutes before slicing.

Rice

  1. 4

    Cook the Rice

Rinse the rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.

  2. 5

    Simmer the Rice

Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Beans

  1. 6

    Heat the Beans

In a small saucepan, combine the canned black beans (drained and rinsed) with cumin and salt. Heat over medium heat until warmed through, about 5-7 minutes.

Burrito Assembly

  1. 7

    Assemble the Burrito

Lay a flour tortilla on a flat surface. On the bottom half of the tortilla, layer rice, black beans, sliced marinated steak, shredded cheddar cheese, a dollop of sour cream, chopped cilantro, and salsa to taste.

  2. 8

    Roll the Burrito

Fold the sides of the tortilla inward, then roll the bottom up to enclose the filling. Serve immediately or wrap in foil for later.
