Chicken Marinade
Toppings
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a medium bowl, whisk together olive oil, lime juice, ground cumin, chili powder, garlic powder, salt, and black pepper until well combined.
- 2
Marinate the Chicken
Place the boneless, skinless chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours for best results.
Grilling the Chicken
- 3
Preheat the Grill
Preheat a grill or grill pan to medium-high heat.
- 4
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
- 5
Rest the Chicken
Once cooked, transfer the chicken to a plate and let it rest for 5 minutes before slicing.
Assembling the Tacos
- 6
Prepare the Tortillas
Warm the corn tortillas on the grill for about 30 seconds on each side or until pliable.
- 7
Slice the Chicken
Slice the grilled chicken into thin strips.
- 8
Assemble the Tacos
Place a few slices of chicken on each tortilla. Top with diced tomatoes, shredded lettuce, fresh cilantro, sliced jalapeños, shredded cheese, and a dollop of sour cream.
- 9
Serve
Serve the tacos warm with lime wedges on the side for an extra kick.
