Rinse the Rice
Place the long-grain white rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This helps remove excess starch.

Soak the Rice
In a large bowl, combine the rinsed rice and 4 cups of water. Add the cinnamon stick. Let the mixture soak for at least 4 hours or overnight for best results.
Blending

Blend the Mixture
After soaking, remove the cinnamon stick. Transfer the rice and water mixture to a blender. Blend on high until the rice is finely ground and the mixture is milky.

Strain the Mixture
Pour the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher, discarding the solids. This is the base of your horchata.

Add Ground Cinnamon
Mix in the ground cinnamon to the horchata. Taste and adjust sweetness if needed.
Serving

Serve Chilled
Refrigerate the horchata for at least 1 hour to chill. Serve over ice if desired and enjoy!
