Wash the large potatoes thoroughly under cold water to remove any dirt. Peel them using a vegetable peeler.

Soak the Slices
Place the potato slices in a bowl of cold water and let them soak for about 30 minutes. This helps to remove excess starch and will make the chips crispier.

Dry the Slices
After soaking, drain the potato slices and pat them dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a few potato slices to the hot oil, being careful not to overcrowd the pot. Fry them for 3-4 minutes until golden brown and crispy.

Drain and Season
Use a slotted spoon to remove the chips from the oil and place them on paper towels to drain excess oil. While they are still hot, sprinkle with salt and paprika if desired.

Stack the corn tortillas and cut them into wedges (quarters). You can cut them in half and then in half again.
