Chicken Marinade
Taco Assembly
Method
Marinating Chicken
- 1
Prepare the Marinade
In a bowl, whisk together olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper.
- 2
Marinate Chicken
Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
Grilling Chicken
- 3
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F).
- 4
Grill the Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- 5
Rest the Chicken
Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
Assembling Tacos
- 6
Warm the Tortillas
Heat the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side or until warm and pliable.
- 7
Assemble the Tacos
Place a portion of sliced grilled chicken on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream. Add sliced jalapeños and chopped cilantro to taste.
- 8
Serve
Serve the tacos immediately while warm, and enjoy!
