Pork Carnitas Preparation

Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a large bowl, combine orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Add the pork chunks and toss to coat evenly.

Cook the Pork
Transfer the seasoned pork to a slow cooker. Add bay leaves and set the slow cooker on low for 8 hours or high for 4 hours until the pork is tender and easily shreds.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Discard bay leaves.

Warm the Tortillas
In a skillet or microwave, warm the flour tortillas until pliable.

Assemble the Burrito
On each tortilla, place a portion of shredded carnitas, a scoop of cooked rice, a portion of black beans, a sprinkle of shredded cheese, some chopped cilantro, and a dollop of sour cream.

Add Salsa
Top each filled burrito with salsa to taste.

Wrap the Burrito
Fold in the sides of the tortilla and roll tightly from the bottom up to enclose the filling.
