Preparation of Pork

Season the Pork
In a large bowl, combine the pork shoulder with salt, black pepper, cumin, and oregano. Rub the seasoning all over the meat to ensure it is evenly coated.

Sear the Meat
In a large skillet over medium-high heat, add a bit of oil and sear the pork shoulder on all sides until browned, about 4-5 minutes per side. This helps to lock in the flavors.

Combine Ingredients
In a slow cooker, place the seared pork shoulder. Add the chopped onion, whole garlic cloves, lime juice, orange juice, chicken broth, and bay leaves.

Cook the Pork
Cover the slow cooker and cook on low for 8-10 hours or until the pork is tender and shreds easily with a fork.

Shred the Meat
Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat into bite-sized pieces.

Serve the carnitas warm, garnished with fresh cilantro, diced onions, sour cream, and sliced jalapeños if desired.
