Beef Preparation

    Sear the Beef

    In a large skillet over medium-high heat, sear the chuck roast on all sides until browned, about 3-4 minutes per side. Remove from heat.

    Prepare Marinade

    In a blender, combine beef broth, chipotle peppers, cumin, oregano, garlic, onion, lime juice, salt, and black pepper. Blend until smooth.

    Slow Cook

    Place the seared chuck roast in a slow cooker. Pour the marinade over the beef, ensuring it is well coated. Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.

    Shred the Beef

    Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the cooker to soak in the remaining juices.

Taco Assembly

    Warm the Tortillas

    In a skillet or on a grill, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

    Assemble Tacos

    On each tortilla, place a generous amount of the shredded barbacoa beef. Top with chopped cilantro, avocado slices, and red onion.
