    Prepare the Marinade

    In a large bowl, combine the pineapple juice, white vinegar, achiote paste, minced garlic, cumin, oregano, salt, and black pepper. Whisk together until the achiote paste is fully dissolved.

    Marinate the Pork

    Cut the pork shoulder into smaller pieces and add it to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

    Cook the Pork

    Preheat your grill or stovetop grill pan over medium-high heat. Remove the pork from the marinade and discard the marinade. Grill the pork pieces for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the edges are slightly charred.

    Rest and Chop

    Once cooked, remove the pork from the grill and let it rest for 5 minutes. Then chop it into small pieces.

Assemble the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until they are pliable.

    Assemble

    On each tortilla, add a generous amount of the chopped pork, diced fresh pineapple, chopped red onion, and cilantro. Top with a dollop of sour cream and a squeeze of lime juice. Add salsa if desired.
