Buttermilk Garlic Ranch

Combine ingredients
In a medium bowl, whisk together 1 cup buttermilk, 1 cup mayonnaise, and 1 cup sour cream until smooth.

Add 2 minced garlic cloves, 1 tablespoon fresh lemon juice, 1 teaspoon dried dill, 1 teaspoon dried parsley, 1 teaspoon onion powder, 1 teaspoon salt, and 1 teaspoon ground black pepper. Whisk until fully incorporated.

Taste and adjust seasoning: add more salt, pepper, or lemon juice as desired. If you prefer a thinner dressing, whisk in up to 1/4 cup additional buttermilk until reaching desired consistency.

Cover and refrigerate for at least 30 minutes (ideally 1 hour) to let flavors meld. Bring out of fridge 10 minutes before serving so dressing isn’t too cold and thick.

Cook bacon
Preheat oven to 400°F (205°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange 6 bacon slices in a single layer. Bake 12–18 minutes, until crisp to your liking. Remove bacon to paper towels to drain and cool; when cool, roughly chop or crumble. (Alternatively, cook in a skillet over medium heat until crisp.)

Prepare lettuce
Remove any tough or wilted outer leaves from 1 head iceberg lettuce. Cut the head into 4 wedges through the core so each wedge holds together (cut top-to-bottom). Rinse wedges briefly under cold water, shake or spin to remove excess water, and pat dry with paper towels. Chill in fridge if you want extra crispness.

Prepare tomatoes and cheese
Slice 2 roma tomatoes into 6–8 wedges or into 1/2-inch slices, depending on preference. Crumble 3 oz gorgonzola into small pieces. Finely chop 2 tablespoons fresh chives.

Assemble: place a lettuce wedge on each plate. Tuck tomato pieces around and slightly on top of the wedge. Spoon 2–3 tablespoons (or to taste) of chilled buttermilk garlic ranch over each wedge, allowing some to drip into the plate. Scatter crumbled gorgonzola and crumbled bacon over the top of each wedge. Sprinkle chopped chives, 1/4 teaspoon coarse salt and a grind of black pepper on each to finish.

Serve immediately so lettuce stays crisp. Provide extra dressing on the side.
