Scallops & Bacon

Method

Prepare Scallops & Bacon

    Trim and dry scallops

    If scallops have a small side muscle, remove it by pulling it off gently. Pat each scallop very dry with paper towels to ensure good browning.

    Cut bacon

    Cut each bacon slice in half crosswise to make 24 shorter strips (one half per scallop).

    Season scallops

    Lightly season both sides of each scallop with kosher salt and freshly ground black pepper.

    Wrap scallops

    Wrap one bacon half around the middle of each scallop, overlapping slightly. Secure with a skewer or toothpick inserted through the bacon and scallop so it holds during cooking.

Cook Scallops

    Preheat and pan-sear

    Preheat a large oven-safe skillet (cast-iron preferred) over medium-high heat. Add 2 tablespoons neutral oil and heat until shimmering but not smoking.

    Sear on stove

    Arrange bacon-wrapped scallops in the skillet, seam side down so the bacon contact seals. Do not overcrowd; work in batches if necessary (6–8 scallops per batch). Sear 1.5 to 2 minutes without moving to develop a golden crust.

    Flip and brown bacon

    Turn each scallop to brown the bacon side and another scallop side, about 1 to 1.5 minutes. You want the bacon to begin crisping but it will finish cooking in the oven.

    Finish in oven

    Transfer the skillet to a preheated 400°F (200°C) oven for 4–6 minutes, or until scallops are opaque in the center and bacon is crisp to your liking. Internal scallop temperature should be about 120–125°F (49–52°C) for tender doneness. If using a non-oven-safe pan, transfer scallops to a rimmed baking sheet before roasting.

    Rest briefly

    Remove scallops from the oven and let rest 1–2 minutes. Transfer to a warm platter, discard skewers if preferred, and keep warm while you finish remaining batches.

Prepare Hoisin Dipping Sauce

    Combine ingredients

    In a small bowl, whisk together 1/2 cup hoisin sauce, 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1/2 teaspoon sesame oil, 1 teaspoon grated fresh ginger, 1 teaspoon minced garlic, and 1 teaspoon honey until smooth.

    Adjust seasoning

    Taste and adjust balance: add a few drops more rice vinegar for brightness, extra honey for sweetness, or a pinch of soy sauce for saltiness.

    Finish garnish

    Stir in toasted sesame seeds and sliced scallion. Transfer sauce to a small serving bowl.

Plate & Serve

    Arrange

    Arrange bacon-wrapped scallops on a warm platter or on individual appetizer plates. Place the hoisin dipping sauce in a small bowl in the center or alongside.

    Garnish and serve

    Garnish scallops with an additional sprinkle of sliced scallion and sesame seeds if desired. Serve immediately with lemon wedges on the side for guests who prefer a bright squeeze.
