    Pat the shucked oysters dry on paper towels to remove excess moisture; do not over-handle. Place oysters in a bowl and season with 1 tsp kosher salt and 1 tsp black pepper. Add cold buttermilk and lemon juice, toss gently to coat, and refrigerate for 15–20 minutes to chill and slightly tenderize.

    Dry mix

    In a shallow bowl or rimmed plate, combine the all-purpose flour, cornmeal, panko (if using), paprika, garlic powder, onion powder, cayenne (if using), 1 tsp kosher salt, and 1/2 tsp black pepper. Whisk thoroughly so spices are evenly distributed.

    Wet mix

    In a second shallow bowl, whisk the 2 large eggs with 2 tbs cold water and 1 tsp hot sauce until smooth. In a third shallow dish, place plain flour (about 1/2 cup) or use a small portion of the dry mix for first dredge—this helps the egg adhere (optional but recommended).

    Set up a three-station breading line: (1) dry dredge flour, (2) egg wash, (3) seasoned dry mix. Keep trays close to the fryer for efficient frying. Use one hand for dry and the other for wet to reduce clumping and messy hands.

Frying

    Heat the neutral oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C). Use a deep-fry thermometer to maintain consistent temperature. If you don't have a thermometer, test by dropping a small pinch of breading into the oil — it should sizzle and brown within ~30–45 seconds.

    While oil heats, remove oysters from the buttermilk, letting excess drip off. Dredge each oyster first in the light flour (or the dry mix reserved for dredging), shake off excess, then dip into the egg wash, then coat thoroughly with the seasoned dry mix. Press the coating gently to adhere. Place breaded oysters on a wire rack (not on paper towel) to rest briefly while you finish breading the batch.

    Fry the oysters in small batches (6–8 oysters at a time depending on pot size) so oil temperature stays around 350°F. Carefully lower oysters into the oil with a spider or slotted spoon. Fry for 2.5–3.5 minutes, turning once if needed, until golden brown and crisp. Internal texture should be plump and just cooked through; avoid overcooking which makes oysters tough.

    Use a slotted spoon or spider to transfer fried oysters to a paper-lined tray or a wire rack set over a sheet pan to drain. Sprinkle a light pinch of salt immediately while hot. Allow to rest 1–2 minutes before serving to let internal juices settle.

    Arrange fried oysters on a warmed platter or individual plates. Garnish with lemon wedges and a sprinkle of chopped parsley. Provide ramekins of cocktail sauce and tartar sauce so guests can choose. Serve immediately while hot and crisp.
