    Pat the fish fillets dry with paper towels. Cut into 1- to 1½-inch bite-sized pieces and place them in a shallow bowl or plate.

    Combine lemon juice, 1 tsp salt, 1 tsp black pepper, and 1 tsp garlic powder in a small bowl. Drizzle over the fish pieces and toss gently to coat. Let marinate at room temperature for 10 minutes (or refrigerate up to 30 minutes).

Breading Station

    Set up three shallow bowls: Bowl 1 — flour (3 tbsp) mixed with cornstarch (2 tbsp), 1 tsp salt, 1 tsp black pepper, and 1 tsp paprika. Whisk to combine.

    Bowl 2 — whisk the 2 eggs with 1 cup milk or buttermilk until smooth.

    Bowl 3 — combine 2 cups panko breadcrumbs with 1 tbsp grated Parmesan (if using). Spread the panko on a plate large enough for dredging.

    One at a time, dredge each marinated fish piece first in the flour mixture, shaking off excess; then dip into the egg mixture, letting excess drip back into the bowl; finally press into the panko, coating all sides. Place breaded bites on a wire rack or plate while you finish breading the rest.

    For extra-crispy bites, double-dip: after the first panko coat, briefly return to the egg wash and panko again for a thicker crust.

Frying / Finishing

    Pour about 1 cup of neutral oil into a heavy skillet (cast iron or stainless) to reach roughly 1/2 inch depth, or heat oil in a deep fryer to 350°F (175°C). If using a skillet, heat over medium-high until oil registers 350°F on a thermometer.

    Working in batches (do not overcrowd), gently add breaded fish bites to the hot oil and fry for 2 to 3 minutes per side, turning once with tongs, until golden brown and the interior reaches 145°F (63°C) or flakes easily. Total frying time per batch will be about 4–6 minutes depending on size.

    Use a slotted spoon or tongs to transfer cooked bites to a paper towel–lined plate or wire rack set over a baking sheet to drain. Keep finished batches warm in a 200°F (95°C) oven while you fry remaining pieces, if desired.

    Sprinkle chopped parsley over the finished bites, squeeze lemon wedges over them to taste, and serve immediately with the optional dipping sauce.

Dipping Sauce (optional)

    Combine 1 tbsp mayonnaise, 1 tbsp yogurt or sour cream, 1 tsp hot sauce, 1 tsp lemon juice, and a pinch of salt in a small bowl. Stir until smooth and adjust seasoning to taste. Chill briefly or serve immediately alongside the crispy fish bites.
