Pasta Base

    Cook the pasta

    Bring a large pot of water to a rolling boil. Add 1 tablespoon sea salt. Add 1 lb dry pasta and cook according to package directions until al dente (usually 9–12 minutes). Reserve 1 cup of pasta cooking water, then drain the pasta and return it to the pot. Toss with 1 tablespoon olive oil to prevent sticking and keep warm.

Proteins

    Prepare proteins (if not pre-cooked)

    If your proteins are not cooked: season chicken breasts with salt and pepper and grill or pan-sear over medium-high heat 5–7 minutes per side until internal temperature reaches 165°F, then slice thinly. For sausage, cook in a skillet over medium heat until browned and cooked through, then slice. For shrimp, sauté in 1 tablespoon olive oil with a pinch of salt and pepper 1–2 minutes per side until opaque. For marinated tofu, press, slice, and pan-sear 3–4 minutes per side until golden. Keep each cooked protein warm in a low oven (200°F) or covered with foil.

    Warm and finish proteins

    If proteins are already cooked, warm briefly in a skillet or oven. Toss grilled chicken or sausage slices with a small ladle (2–3 tbsp) of chosen sauce to keep moist, or lightly drizzle with olive oil and a squeeze of lemon for a brighter flavor.

Sauces

    Heat sauces

    Warm marinara, Alfredo, and pesto separately in small saucepans over low heat. Stir frequently to prevent sticking. If a sauce is too thick, thin with reserved pasta water, 1 tablespoon at a time, until desired consistency (for marinara and Alfredo). Taste and adjust salt and pepper.

    Option: combine sauces

    For a creamier tomato option, combine 1 cup marinara with 1/2 cup Alfredo over low heat and whisk until smooth. For pesto, add 1–2 tablespoons pasta water to loosen.

Vegetables & Mix-ins

    Sauté vegetables

    In a large skillet over medium heat, add 1 tablespoon olive oil. Sauté mushrooms and red onion 4–5 minutes until softened. Add cherry tomatoes and roasted red peppers; cook 2–3 minutes until tomatoes begin to blister. Add baby spinach and cook until just wilted, about 1–2 minutes. Stir in olives and capers, then season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Remove from heat and keep warm.

    Toast pine nuts

    In a small dry skillet over medium-low heat, toast 1/4 cup pine nuts, stirring frequently, until golden and fragrant, 2–4 minutes. Transfer to a plate to stop cooking.

Assembly (Crafted Pasta Bar)

    Set up your pasta bar with warmed pasta in a large serving bowl, warmed sauces in separate bowls or sauce warmers, and proteins, vegetables, cheeses, and toppings in individual dishes so guests can assemble plates.

    To build a plated portion (serves 1): place 1.5 cups cooked pasta on a plate or bowl. Spoon 1/2 cup of desired sauce over the pasta and toss gently to coat, adding 1–2 tablespoons reserved pasta water if needed to loosen. Top with 1/2 cup chosen protein (or a mix), 1/4–1/2 cup sautéed vegetables, 2 tablespoons grated Parmesan, and 2 tablespoons fresh mozzarella. Finish with a drizzle of extra-virgin olive oil (about 1 teaspoon), a sprinkle of red pepper flakes (to taste), fresh basil, toasted pine nuts, and a crack of black pepper. Serve with a lemon wedge to squeeze over seafood or chicken if desired.

    Label each sauce and protein so guests can easily choose. Keep hot items in warmers or insulated containers and cold toppings chilled on ice if the bar will be out for more than 30 minutes.

Finishing & Serving

    Provide serving utensils for each component (tongs for proteins and vegetables, ladles for sauces, spoons for cheeses and toppings). Replenish items as needed. Offer extra salt, pepper, chili flakes, and lemon wedges on the side. Leftover pasta and components can be refrigerated separately for up to 3–4 days; reheat sauces and proteins gently and toss with freshly reheated pasta.
