Bruschetta base

Prepare and toast bread
Preheat oven to 425°F (220°C). Slice the loaf on a slight diagonal into 12-14 slices about 1/2-inch thick. Arrange slices in a single layer on a baking sheet. Brush both sides lightly with 1/4 cup extra-virgin olive oil. Toast in the oven until golden and crisp, about 6–8 minutes, flip halfway and toast an additional 3–4 minutes if needed. Remove from oven and while still warm, rub the cut side of the halved garlic cloves over each slice. Sprinkle with 1 tsp sea salt and 1/2 tsp freshly ground black pepper. Set aside on a wire rack.

While the bread toasts, prepare the tomato topping. In a medium bowl combine diced plum/Roma tomatoes and halved cherry tomatoes. Add 1/4 cup finely diced red onion, 2 tbs chopped capers, 2 tbs chopped parsley and the chiffonade basil leaves.

Dress the tomato mixture with 1 tbs fresh lemon juice, 2 tbs extra-virgin olive oil, 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Toss gently and let sit at room temperature for at least 10 minutes so flavors meld. Taste and adjust seasoning.

Pat the fish fillets dry with paper towels and cut into 12–14 bite-sized pieces (about 1 to 1½-inch pieces) so there is one piece per crostini slice. Place fish in a bowl and toss with 1 tbs olive oil, 1 tsp minced garlic, 1 tsp lemon zest, 1/2 tsp smoked paprika, 1/2 tsp dried oregano, 1/2 tsp salt and 1/4 tsp freshly ground black pepper. Let sit 5 minutes to absorb flavors.

Heat a large nonstick or stainless steel skillet over medium-high heat and add 1 tbsp butter. When the butter is foaming, add the seasoned fish pieces in a single layer (work in batches if necessary). Cook without moving for 2–3 minutes until the bottom is golden, then gently turn and cook another 1–2 minutes until the fish is opaque and just cooked through (total 3–5 minutes depending on piece size). Transfer to a plate and keep warm. Taste one piece and adjust seasoning if needed.
Assembly & garnish

Spoon a heaping tablespoon of the tomato-caper mixture onto each garlic-rubbed toasted bread slice, leaving a little rim so it doesn't slide off.

Place one cooked fish piece on top of each tomato-topped crostini, gently pressing so it adheres.

Top with a small pinch of baby arugula or microgreens if using, and shave a little Parmesan over each bruschetta.

Arrange on a platter and serve immediately while the toast is crisp and the fish is warm.
