Method
Prepare ingredients and equipment
Measure and weigh all ingredients precisely. Finely chop the cocoa mass/unsweetened chocolate so it melts evenly. Line or clean chocolate molds and have a clean, dry spatula ready.
Set up a double boiler: fill a saucepan with 2–3 cm (1 inch) water and bring to a gentle simmer. Place a heatproof bowl over it making sure the bowl does not touch the water.
Melting and mixing
Melt cocoa butter
Put the measured cocoa butter in the heatproof bowl and gently melt until fully liquid, stirring occasionally. Keep the temperature below 55°C (131°F).
Add cocoa mass
Add the chopped cocoa mass/unsweetened chocolate to the melted cocoa butter. Stir continuously with the spatula until the mixture is smooth and homogeneous. Maintain temperature between 40–50°C (104–122°F).
Incorporate sugar
Add the granulated sugar gradually, stirring constantly. If sugar is grainy, you can pre-process it to a finer texture in a spice mill or use caster sugar. Continue stirring until sugar is evenly distributed and begins to dissolve; keep temperature steady.
Emulsify and flavor
Add the soy lecithin (if using) and vanilla extract and a pinch of fine sea salt. Stir thoroughly to emulsify the mixture and develop a smooth texture.
Refining and tempering (texture and snap)
Optional refinement
For the smoothest texture, pass the warm chocolate through a fine sieve or use a chocolate refiner/conche for 1–4 hours to reduce particle size. Home cooks can also let the melted chocolate sit while stirring frequently to help sugar dissolve, but a perfectly smooth commercial texture requires specialized equipment.
Temper chocolate (seed method)
Set aside a small portion (about 25–30 g) of the melted chocolate in a separate bowl and cool it to 26–27°C (78–80°F). Continue to hold the main bowl at 31–32°C (88–90°F) for dark chocolate (or 30–31°C / 86–88°F for milk chocolate). Once the seed chocolate reaches the cooler temperature, stir it back into the main bowl to bring the whole mass to temper (target 31–32°C for dark). Use a digital thermometer to confirm. Proper tempering creates glossy chocolate with a good snap.
Molding and setting
If desired, add 1 teaspoon neutral oil to the tempered chocolate and stir briefly for extra sheen. Pour the tempered chocolate into the prepared mold, tapping gently to remove air bubbles. Scrape off excess chocolate to level the surface.
Place molds on a flat tray and allow to set at cool room temperature (18–20°C / 64–68°F) for 15–30 minutes, then move to a cooler spot (12–16°C / 54–61°F) if available to finish setting for 1–2 hours. Avoid refrigeration unless necessary; quick cooling can cause bloom.
Once fully set and glossy, unmold the chocolates by gently flexing the silicone or tapping the mold. Store chocolate in a cool, dry place in an airtight container away from strong odors.
Notes and troubleshooting
If chocolate becomes dull or has white streaks (fat bloom), it indicates improper tempering or storage. Re-melt and temper again to restore gloss and snap. If grainy, additional conching/refining or using finer sugar can help.
