Prepare strawberries
Rinse 24 strawberries under cool water and gently pat them dry with paper towels. Allow them to air-dry completely on a clean towel for at least 30 minutes — any surface moisture will cause the chocolate to seize or not adhere properly.
Inspect berries and remove any with soft spots. Keep the green stems intact to provide a handle for dipping.
Prepare workspace
Line a baking sheet with parchment paper or a silicone mat and set it nearby. Place small bowls with decorations (crushed nuts, sprinkles, raspberry powder) within easy reach so dipped berries can be decorated immediately.
Melt chocolate coating
Set up a double boiler: bring 1–2 inches of water to a gentle simmer in a saucepan. Place a heatproof bowl over the pan, ensuring the bowl bottom does not touch the water. Add 10 oz semisweet chocolate chips and 2 oz bittersweet chocolate to the bowl along with 1 tablespoon coconut or neutral oil.
Stir gently and continuously until the chocolate is melted and smooth, about 4–6 minutes. If using a microwave, place chocolate and oil in a microwave-safe bowl and heat in 20–30 second bursts at 50% power, stirring between bursts, until smooth.
Remove the bowl from the heat and wipe any condensation from the bottom before proceeding. Keep the melted chocolate warm (over the warm — not boiling — water or in short microwave bursts) to maintain a smooth dipping consistency.
Dip strawberries
Place the dipped strawberry on the prepared parchment-lined baking sheet with the dipped side up so the chocolate can set. Repeat with remaining strawberries.
If adding decorations that need to adhere (sprinkles, nuts), sprinkle or press them onto each strawberry immediately after placing it on the sheet, before the chocolate begins to firm.
Make white chocolate drizzle (optional)
Place 3 oz white chocolate and 1 tsp shortening or coconut oil in a small heatproof bowl. Melt using the same double-boiler method or in the microwave in 10–15 second bursts, stirring until smooth. Transfer melted white chocolate to a small piping bag, a zip-top bag with the corner snipped, or use a fork for drizzling.
Drizzle white chocolate over the set (but still slightly tacky) dark-coated strawberries in a back-and-forth motion to create thin lines. If desired, immediately dust with freeze-dried raspberry powder for color contrast.
Set and store
Allow the chocolate to set at room temperature for 30–60 minutes until firm. For quicker setting, chill the tray in the refrigerator for 10–15 minutes, but avoid prolonged refrigeration as it can cause condensation when brought back to room temperature.
Once set, transfer strawberries to a single layer in an airtight container lined with parchment if transporting. Store in the refrigerator and consume within 24–48 hours for best texture and freshness.
