Prepare strawberry puree
Hull and roughly chop 2–3 medium strawberries. Place in a blender or food processor and pulse until smooth. If needed, press through a fine sieve to remove seeds. Measure 1 oz of the puree for the cocktail.

If rimming the glass, rub the lemon wedge around the glass rim and dip the rim into a small plate of granulated sugar to coat lightly. Set the glass aside.
Mixing

Dry shake (if using egg white)
In a cocktail shaker, add the measured strawberry vodka (1.5 oz), Irish cream (1 oz), strawberry puree (1 oz), fresh lemon juice (0.5 oz), simple syrup (0.5 oz), and the egg white (0.5 each) if using. Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify and create a froth.

Wet shake
Open the shaker, add 4 ice cubes, re-seal, and shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosty on the outside.

Using a fine strainer, double-strain the cocktail into the chilled, sugared coupe or martini glass to remove ice shards and any remaining solids from the puree.
Garnish & Serve

Float one thin strawberry slice on the surface of the cocktail. If desired, gently drizzle a very small barspoon (about 1/4 tsp) additional Irish cream in a thin line on top for a pretty swirl (optional).

Place the mint sprig beside the strawberry slice for aroma and presentation. Serve immediately.
