Broth base
Pour in the chicken broth and water, increase heat to bring to a gentle simmer, then reduce heat to maintain a low simmer while you prepare the vegetables (about 8–10 minutes). Taste and adjust seasoning slightly if needed.

Sweat the vegetables
While the broth is heating, in a separate sauté pan (or the same pot if space allows) add the diced onion, carrots and celery. Sauté over medium heat for 6–8 minutes until onions are translucent and vegetables begin to soften. Add the minced garlic and sauté 30–60 seconds until fragrant.
Transfer the softened aromatics into the simmering broth. Add the parsley and white pepper (if using). Continue to simmer gently for 8–10 minutes so the flavors meld and vegetables soften through.

Add chicken and turkey
Stir the shredded chicken and turkey into the simmering soup. Simmer 3–5 minutes to heat through and allow meat to release flavor. If meat is cold from fridge, simmer 6–8 minutes until warmed thoroughly.
Add crab
Gently fold in the lump crab meat in the last 2–3 minutes of cooking to warm it without breaking up the lumps. Taste and adjust salt and pepper carefully—crab is delicate and can be salty.

If using egg noodles, add them to the simmering soup and cook according to package directions (usually 6–8 minutes) until al dente. If using rice or leftover mashed potato, add enough to warm and adjust thickness: rice will thicken slightly, mashed potato will make the soup creamier.
Add the frozen peas and corn in the final 2–3 minutes so they heat through but stay bright and tender. Stir in the lemon juice to brighten the flavors.
Finishing & garnish
If you prefer a richer soup, reduce heat to low and stir in the heavy cream. Warm through 1–2 minutes without boiling once cream is added. Remove and discard the bay leaf.
