Doughnuts

    Prepare the Dough

    In a mixing bowl, combine ricotta cheese, egg, vanilla extract, and granulated sugar. Mix until smooth.

    Combine Dry Ingredients

    In another bowl, whisk together flour, baking powder, salt, and cinnamon.

    Mix Together

    Gradually add the dry ingredients to the wet mixture, stirring until just combined.

    Shape the Doughnuts

    Using a spoon, scoop out portions of the dough and shape them into balls.

    Fry the Doughnuts

    In a deep pot, heat vegetable oil to 350°F (175°C). Fry the dough balls until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Cinnamon Sugar

    Prepare Cinnamon Sugar

    In a small bowl, combine granulated sugar and cinnamon. Toss the fried doughnuts in the cinnamon sugar until evenly coated.

Espresso Gelato

    Make the Custard

    In a saucepan, whisk together milk, cream, and sugar over medium heat until sugar has dissolved.

    Add Espresso

    Remove from heat and stir in espresso and vanilla extract.

    Temper the Egg Yolks

    In a separate bowl, whisk the egg yolks. Gradually add some of the hot mixture to the yolks to temper them, then return to the saucepan.

    Cook the Mixture

    Cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Chill in the refrigerator.

    Churn the Gelato

    Once chilled, churn in an ice cream maker according to manufacturer instructions.

Whipped Cream

    Make Whipped Cream

    In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assembly

    Serve

    Serve the warm doughnuts with a scoop of espresso gelato on the side and a dollop of whipped cream on top.
