Braised Fennel Recipe
We have taken a few humble, wintery vegetables that are typically used in supporting roles and made them the star. Whole fennel bulbs, slowly braised in chicken broth and herbs, served chilled with spicy tangerine vinaigrette, apple cider vinegar cured celery branch, crispy prosciutto and candied orange.

Prepare the Fennel
Trim the fennel bulbs, removing the tough outer layers and slicing them in half lengthwise. Heat olive oil in a large skillet over medium heat.

Sear the Fennel
Place the fennel halves cut side down in the skillet and sear until golden brown, about 5-6 minutes.

Braised the Fennel
Add chicken broth, thyme, salt, and pepper to the skillet. Cover and let simmer for 25-30 minutes until the fennel is tender.

Prepare the Celery
While the fennel is braising, slice the celery stalks and toss them with apple cider vinegar. Let sit for about 10 minutes to cure.

Crisp the Prosciutto
In a separate pan, cook the prosciutto over medium heat until crispy. Remove and drain on paper towels.

Make the Vinaigrette
In a small bowl, whisk together tangerine juice, honey, and mustard until combined.

Plate the Dish
Once the fennel is done, let it cool slightly. Arrange on a plate with cured celery, crispy prosciutto, and candied orange peel. Drizzle with tangerine vinaigrette.
