Prepare the Marinade
In a bowl, mix together olive oil, soy sauce, minced garlic, black pepper, and salt. Place the pork loin in a resealable bag or a shallow dish and pour the marinade over it. Let it marinate for at least 1 hour, ideally overnight in the refrigerator.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Sauté the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the sliced onions and bell peppers until they are tender, about 5-7 minutes.

Sear the Pork Loin
Remove the pork loin from the marinade and sear it in the same skillet over medium-high heat for about 3-4 minutes on each side until browned.

Bake the Dish
Transfer the seared pork loin to a baking dish, add the sautéed vegetables on top, and pour any remaining marinade over everything. Bake in the preheated oven for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Remove from the oven, let it rest for 5 minutes before slicing. Garnish with fresh parsley and serve.
