Preparation of Pie Crust

    Make the Pie Dough

    In a large mixing bowl, combine all-purpose flour, sugar, and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preparation of Apple Filling

    Prepare the Apples

    Peel, core, and slice the apples into thin wedges. Place them in a large bowl.

    Mix the Filling

    Add sugar, brown sugar, ground cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract to the apples. Toss until evenly coated.

Assembling and Baking the Pie

    Roll Out the Dough

    Preheat the oven to 425°F (220°C). On a floured surface, roll out one dough disk to fit a 9-inch pie pan. Place the rolled dough into the pie pan.

    Fill the Pie

    Pour the apple filling into the crust, spreading it evenly.

    Top the Pie

    Roll out the second dough disk and place it over the apple filling. Trim and crimp the edges to seal. Cut slits in the top crust for steam to escape.

    In a small bowl, beat the egg with milk. Brush the mixture over the top crust.

    Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
