Preparation of Marinade

    In a medium bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well blended.

Marinating Salmon

    Place the fresh salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Preparing Vegetables

    While the salmon is marinating, prepare the seasonal vegetables. In a bowl, combine sliced zucchini, bell pepper, and asparagus. Drizzle with olive oil, and season with salt and black pepper. Toss to combine.

Grilling Salmon and Vegetables

    Preheat the grill to medium-high heat. Once hot, remove the salmon from the marinade and place it on the grill, skin side down. Grill for 6-8 minutes on each side, or until the salmon flakes easily with a fork.

    While the salmon is grilling, place the seasoned vegetables on a grill basket or use skewers. Grill alongside the salmon for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

    Once both the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon hot, accompanied by the seasonal vegetables on the side.
