Finely chop the onion, carrot, and celery. Dice the potatoes and zucchini into bite-sized pieces. Mince the garlic.

Chop Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

Sauté Base Ingredients

Add the minced garlic to the pot and sauté for an additional 1-2 minutes until fragrant.

Add Garlic

Add the diced potatoes, zucchini, green beans, canned diced tomatoes (with juice), and cannellini beans to the pot. Stir to combine.

Combine Vegetables & Beans

Pour in the vegetable broth. Add bay leaves, salt, and black pepper. Stir well.

Add Broth and Seasoning

Bring the soup to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the vegetables are tender.

Simmer

Remove the bay leaves from the soup. Stir in the fresh basil just before serving.
