Preparation of Salad Base

Prepare the Greens
Wash and dry the romaine lettuce and Tuscan kale. Chop the romaine into bite-sized pieces and remove the stems from the kale, tearing the leaves into smaller pieces.

Make the Croutons
Preheat your oven to 375°F (190°C). Cut the bread into cubes and place them in a bowl. Mince the garlic cloves and mix them with olive oil, salt, and black pepper. Drizzle this mixture over the bread cubes and toss to coat evenly. Spread the coated bread cubes on a baking sheet and bake for 10-15 minutes or until they are golden brown, stirring halfway through.

Prepare the Caesar Dressing
In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, grated Parmesan cheese, salt, and black pepper until smooth. If using, finely chop the anchovies and fold them into the dressing.
Combine and Serve

Assemble the Salad
In a large bowl, combine the chopped romaine and Tuscan kale. Add the garlicky croutons and drizzle with the homemade Caesar dressing. Toss to combine until the greens are evenly coated with the dressing. Serve immediately, garnished with additional grated Parmesan if desired.
