Prepare Gnocchi

Prepare Cheese Filling
In a bowl, mix together ricotta, mozzarella, parmesan, salt, and black pepper until well combined.

Stuff Gnocchi
Take small portions of potato gnocchi, flatten them, add a teaspoon of cheese filling, and carefully fold over to seal. Repeat until all gnocchi are stuffed.
Make Vodka Sauce

Sauté Shallots and Garlic
In a large skillet, heat olive oil over medium heat. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

Add Vodka
Carefully pour in the vodka and let it simmer for about 2-3 minutes to cook off the alcohol.

Add Tomatoes and Cream
Stir in the crushed tomatoes, heavy cream, salt, black pepper, oregano, and crushed red pepper flakes. Allow the sauce to simmer on low heat for about 10-15 minutes, stirring occasionally.
Cook Gnocchi and Assemble

Cook Gnocchi
In a large pot of boiling salted water, cook the stuffed gnocchi until they float to the surface, about 3-4 minutes. Remove with a slotted spoon and set aside.

Combine Gnocchi and Sauce
Add the cooked gnocchi directly to the vodka sauce and toss gently to coat.

Serve
Plate the gnocchi with vodka sauce, top with sautéed mushrooms, chopped oven-dried tomatoes, grated pecorino romano, and torn basil. Enjoy!
